A home that is "site-built" is constructed on the building site, piece by piece. Manufactured and modular homes are not classified as site-built because they are made mostly in the factory and then transported to the site. A custom home and a home made according to stock building plans may both be stick-built, provided that they are constructed on the land where they will remain.
The ultimate advantage to building onsite is that you have unlimited flexibility in your new home. The disadvantage is that this building method has the longest construction time to complete.
Still, for those who want complete control of the end project it may be the best choice for you.
